This is a nice alternative to the boxed mac 'n cheeze from the grocery store. I use Gluten Free Tinkyada pasta. It is delicious. The sauce uses a recipe based on a roux. A roux is a thick sauce that combines a fat plus a starch as a thickener. Milk is added to complete the sauce. Here we add cheese as the finishing touch.
Ingredients:
12 oz. Tinkyada Ziti (or other pasta shape)
6 oz cheddar cheese
1 T cornstarch
1/2 milk (rice, soy or cows)
1/8 tsp sea salt
2 T butter
Cook pasta according to directions. Meanwhile, heat on medium high in a saucepan the butter, salt, and cornstarch. Next whisk in the milk and bring to a simmer. Stir until the mixture thickens. Next add the cheese stirring often until melted. Mix cheese sauce + ziti. Serve hot- Yum!
