This cookie recipe is adapted from a recipe courtesy of one of the chefs at the Quimby Colony in Portland, Maine; Missy Corey.
Ingredients:
1 c peanut butter
3/4 c sugar
1/4 c rice flour
1 egg
1 tsp vanilla
1 tsp salt
1 tsp baking powder
Preheat oven to 350 degrees F. Combine all ingredients. Place batter by the teaspoon on a cookie sheet. Using fork tines, make the traditional peanut butter cookie top impressions. Bake for 9-11 minutes until golden brown.
