Buckwheat Hash

An update on corned beef hash, but without the meat and the gluten. This recipe include sardines. I like Wild Planet wild sardines in spring water. Sardines are a good source of protein and high in calcium.

Ingredients:
4 eggs, scrambled
1 c buckwheat, prepared
4 oz sardines, chopped
1/4 tsp sea salt
1 T olive oil

Place a medium iron skillet over medium high heat. Add olive oil. When oil reaches its smoke point, add beaten eggs and stir with a fork for about 15 seconds. Lower heat to medium and add prepared buckwheat. Stir until eggs are cooked. Stir in salt and sardines. Serve warm with a green salad.

Preparation time: about 15 minutes
Makes 2-3 servings
