Holiday Stuffing

This year we had a partially Gluten Free Thanksgiving at my mom's house. GF stuffing and GF spicy apple pie were on the menu.

Ingredients:
4 T olive oil or butter
1 large onion
2 shallots
4 carrots
2 celery sticks
1 head of garlic
6 shiitake mushrooms
1 tsp sea salt
2 sprigs of thyme
1 tsp dried rosemary
1 loaf of GF bread
1/4 c - 1/2 c veggie or chicken broth

Cube all the bread and arrange on a baking tray. Bake for 15 minutes or until golden brown, in a 350 degree oven.

Meanwhile, in a dutch oven or heavy bottom pan, heat olive oil or butter over medium high heat. Add chopped onion, shallots and garlic. Stir frequently until onions are translucent. Add remaining ingredients except for the bread and broth. Sauté on medium heat until veggies are somewhat soft.


Add more or less broth depending on how soft you like the dressing.
Remove bread from oven and add to the veggie mixture. Stir often over medium heat for 10 minutes. Bake in dutch oven or covered glass casserole dish for 30 minutes in a 325 degree oven. Serve with a Thanksgiving meal or any time.
