Kasha Breakfast

Kasha or buckwheat groats are technically a fruit. They have an inherently different effect on the body than traditional grains which are mostly cereals and grasses. The fruit of buckwheat is an achene. Achenes contain a single seed that nearly fills the pericarp (the fleshy part of the fruit), but does not adhere to it. This porridge is a nice alternative to cream of rice or oatmeal.

Ingredients:
1 c kasha (buckwheat groats)
1 egg
2 c boiling water
1/4 tsp salt
1 T butter or olive oil
garnish:
black pepper or maple syrup

In a small bowl beat the egg. Add kasha and stir until well coated. Pour mixture into a medium saucepan set to medium high heat. Stir constantly for 2-3 minutes until egg dries slightly and kernels begin to separate. Add boiling water, salt and butter. Turn down the heat to a simmer, cover and let steam for 7-10 minutes. Garnish with pepper (for savory) or maple syrup (for sweet).
