Liver Tea

I'm now interning at Flower Power, a beautiful little herb shop in the East Village that has been around almost 20 years. I have the opportunity to get to know many different herbs. Here is a bitter tea that is protective and antispasmodic for both the liver and gallbladder. This is for a 2 1/2 oz batch that will last about a few weeks.

Ingredients:
1/2 oz wormwood
1/2 oz celandine
1/2 oz caraway seeds
1/2 oz peppermint
1/2 oz lemon balm

Mix all herbs together in a large bowl. Store in a paper bag or glass jar. Label the container with the date and the ingredients.

To make the tea:
Add 2-3 T of the herb mixture to a quart canning jar. Pour boiling water into the jar. Cap and let infuse for 2-6 hours. Strain herbs and drink. Any leftover prepared tea may be stored in the refrigerator for up to 36 hours.
